Comfort pasta: Yaki Udon in a miso sauce


I'm not going to go into what life is like right now, except to say that this last month has been a shit-storm ... and then it got a whole lot worse.

There is a dire need for comfort food in my life right now.  Something comforting, high in energy, but also healthy enough to keep me going.  Unfortunately, there has been zero opportunity to go shopping, so the pantry is getting sparse.  Thankfully I have a garden full of growing things.  

Comfort food for me starts with pasta.  You can have the chocolate and icecream.  I'm keeping the pasta.  

When I saw the udon noodles hidden under the chickpeas, I knew that's what I needed.  Yaki udon (basically meaning fried udon) sprung to mind.  Yaki udon always has cabbage, a protein and a sauce.  Usually a specific kind of sauce... a sauce that got used up weeks ago.  Too hungry to think of a better meal plan, I decided to improvize.

I found a wedge of cabbage at the back of the fridge, cut off the bad bits and shredded up enough for one serving.  The garden donated carrots, cauliflower, and green onions.  But what to use to make the sauce?  I have miso on the mind right now... so why not give it a try?

The results were delicious; albeit not photogenic.


Yaki Udon in a Miso Sauce 

(serves one)


1/2 brick of udon noodles
drizzle sesame oil
1/2 cup of shredded cabbage
1 small carrot, sliced thin
1 floret of cauliflower, sliced thin
1/2 tin tuna, drained
2 Tbs sake
1/4 tsp soy sauce or soy sub
1/2 tsp honey
1 tsp + miso or soy-free miso paste (chickpea miso tastes best in my opinion)
one green onion, chopped into rings

  • Bring a small pot of water to the boil and par-boil the noodles for about one min (this is a good time to chop the veg while you wait).  Strain the noodles and place to one side.
  • In a small fry pan or wok, fry the veg in sesame oil on high, until starts to brown a little around the edges.  Stir in the tuna and cook another minute.
  • Add the noodles and everything else except the green onion.  Stir well and simmer at medium-high until the sauce reduces.  Stir frequently.
  • Just before serving, mix in the green onion.
  • Enjoy!

Fast food:  All in all this took me less than 10 minutes.  That includes digging everything out of the cupboard and garden. 

Healthy treat:  All the ingredients are good for you.  The miso, honey, veg, even the tuna.  Of course, some of these ingredients are not so health in large quantities... the salt in the miso, the sweet in the honey, the whatever-it-is in the tuna... but truthfully, these are not large quantities.  Besides, it's comfort food. Any healthy that happens is purely accidental.

Affordable: 50 cent for the noodles (if you buy the expensive ones), Somewhere between 20 to 50 cents for the rest of the stuff.   Let's round up and call it a dollar per serving.

Cooking with allergies:  This is easily customizable to accommodate allergies.  I mentioned using the soy free miso and sauce, but you can change anything you want.  Gluten free?  Just use other noodles.  Vegan? Replace the honey and tuna with (vegan friendly sweetener) and tofu.

Saving Seeds

This year I had the great joy to participate in the Victoria Seed Library.  The beginning of the growing season I choose 6 different seed kinds from their lovely list of things to grow, and received tiny envelopes with a pinch of seed in each.  The goal is to plant the seeds in the garden, nurture them, then select and save seeds from the best plants.



I'll save a few seeds for myself and in the case of dried beans and peas, a handful for a meal, then give the remaining seeds back to the library so they can share the seeds with people next year.

It's not only a lot of fun, but it's also a good reminder about how precarious our food future is and the importance of maintaining genetic diversity in our gardens.

The Seed Library is free to participate in, free workshops and free seeds.  The only thing you are obligated to do is to give back some of this years seeds and a record of how the plants grew, conditions, &c.

We have sandy soil that we augment heavily with manure and compost, a long dry summer, and a weak well.   So when I selected the plants worth keeping seeds from, I choose those that were most drought tolerant and good producers.

Here are some observations on the seeds I choose and how they grew on our farm.



Tangerine Marigold (which I suspect are actually Tangerine Gem Marigolds)


Tiny little flowers that smell like apple candy.  Grow in a bush formation about 8 inches high, and make a nice border.  I thought maybe I would use these for dyeing yarn, but given how tiny they are, not much hope of collecting enough for that.  However, they may make a good companion plant, as the insects seem to avoid them.  More research is needed, but yes, I think I'll grow these again next year.

Drought tolerance?  About 1/4 died from drought, but what did survive thrived!

I started these inside then planted them out in the garden when danger of frost had past.

Green Lentils

Moderate drought tolerance, but the number of pods that filled out was lower than I would prefer.  For the pods that did fill out, there was only one lentil per pod instead of the two there should have been.  I hope it was simply the lack of water and not a flaw of the plant that prevented the beans from forming.

Also, as the lower pods dried out, they started to split open and spit out their seeds, so I ended up harvesting the plants much earlier than I would have hoped.


Hutterite Soup Beans

These make really nice snacking beans as well as dry soup beans.  They do have a climbing tendency despite what the internet says.  The beans aren't ready yet, but when they are, I think I'll separate the ones that like to climb from the ones that prefer to bush.

I had a lot of trouble starting these seeds, though I think the soil was warm enough.  In the end, about half survived to reproduce.

This has been an outstanding success.  Every single one of these seeds I planted grew, and my garden is overwhelmed by tiny tomatoes growing on massive bushes.  The most sturdy of tomato cages cannot contain this plant.  I had so many germinate that I started giving the extras away.

Funny thing is, the ones with the richest soil aren't growing as well as the ones with sandy loam.

More drought tolerant than regular garden peas, these little gems taste delicious at different stages.  The shoots are delicate and sweet.  The young pods can be consumed whole like you would snow peas, the mature pods make great boiled peas and finally the dried peas... well they are just like yummy dry peas.

Didn't grow :( despite planting the seeds in different environments and time of year.  No seeds left.  Maybe the Library will accept bread poppy seeds instead.


All in all, it's been an enjoyable experience.  It's nice to be reminded that gardening is not a solitary act.

Mystery Squash Becomes Pumpkin Bread Recipe - aka, Mystery Squash Bread Recipe

What to do when one's garden has become invaded by squash?  Make squash bread of course.  

There are these three plants, began innocently enough, tiny tender things, needing coaxing and care to begin their life in the soil.  I created pots from old newspaper and filled them with finely sifted soil.  Placed one seed carefully inside each pot and watered it with dedication.  When the moment was right, I dug a hole in the garden, not too big, but not too small, and pressed the tender shoot, pot and all, into the soil.  Covered it with a cold frame made from old windows, and with some words of encouragement, left it to fend for itself.


Well, perhaps I gave it a little too much encouragement.  Each plant sent out, at first one long searching vine, then another and another, until each one had produced over a dozen vines, climbing over fence and pea plant with equal enthusiasm.  June was scary!  The vines would grow over a foot a day, each morning I had to hack my way past over-enthusiastic squash, just to get into the garden.  Finally the vine growth seems to have reached the limit at just shy of 25 feet, the bright yellow blossoms are gone, replaced with splendid orange squash.

After bumming around the internet for a few hours, I finally came across a squash recipe I liked: Savory Pumpkin Rosemary Bread.  The flavours in this recipe look really good, so I thought it would translate nicely to sourdough.  I started roasting the squash at midnight - the only time of day when the kitchen is cool enough to cook - and made pumpkin mush the next morning.  

Disaster struck when I got my sourdough starter out of the fridge - BLACK MOLD.  

I'm not hugely squeamish with mold, but when black mold happens I won't touch it.  Even if it isn't real black mold, just black colour mold, it's just not worth the risk.  

So sadness, my sourdough starters are all dead.

I blame myself, because I know during the summer the water in the well kills starters.  Something from one of our neighbours uphill from us seeps into the water table and devastates my cultures.  I suspect it's the time of year when swimming pools are emptied and cleaned.  From June through August, I always try to boil my water before using it in any culture that relies on bacteria.  But this year, we had a new filtration system installed, so I thought I could be lazy... sniffle... oh well.

Good thing I know how to make more starter, but that takes time and doesn't help me with all this squash/pumpkin mush.  So commercial yeast it is.

The recipe linked above looks fantastic, but relies heavily on mechanical devices to mix the dough.  I changed an ingredient or two, the method, the order of adding, timing, and even some of the ratios, so I'm going to post my version of this recipe for those of you who don't have a standing mixer or who enjoy kneading by hand.

Mystery Squash Bread



The night before

at least 1 lb squash or pumpkin (without seeds)
olive oil
flour, whole wheat if you have it
water
yeast

  • Cut up the squash into 3 inch chunks - about that size, don't be fussy unless you want to.  Rub with oil and place on a roasting tray in the oven.  350F for about 30 min, or until it's mushy.  Remove from oven, and cover with a clean towel.  Leave on the counter overnight or until cool enough to handle.
  • In a small dish, make a poolish or biga by combining 2 cups of flour with a pinch of yeast and enough water to make it into a thin batter.  Cover with a cloth and leave on the counter overnight.  

Baking day

The roasted squash (or 2 cups canned squash mush)
The poolish from the night before
1 cup warm water
2 Tbs instant yeast
small drizzle honey
1Tbs sea salt
flour (I used all purpose, but next time I'll use a mix of 1 cup whole grain and the rest all purpose)
about 1 tsp fresh rosemary finely chopped, or 1/2 tsp dry
olive oil

  • Get your big bread bowl out and in it, combine the honey, yeast and warm water.
  • Scrape the squash off it's skin directly into a blender or blitzer.  And blend/blits until mush.  Alternately you could just mush it up with a fork.  I don't think there are any rules as to how lumpy or smooth your squash mush is.  
  • The yeast should be starting to work by now.  If not, leave it 5 min before continuing.
  • Next add the squash mush, poolish, and salt to the yeast water.  Mix together well.  
  • Add about one cup of flour (the whole grain if you are using it) to the mix, and mix.
  • Mix in about 1 handful of flour at a time, until you get the traditional shaggy mess that bread recipes always talk about.
  • Put your shaggy mess on a well floured countertop and take the bowl immediately to the sink and wash it.  Some people think this is an optional step and we should just get another bowl out of the cupboard, but there are good reasons for putting the effort in.  One, it lets your dough rest.  Two, the bowl is easier to clean now than later.  And three, you don't have to hear the person who does the dishes complain about how they love your bread but hate the mess it makes.
  • Dry the bowl with a clean cotton or linen towel (keep the towel to one side for covering the dough later) and pour a generous glug of olive oil in the now dry bowl.
  • Go back to your shaggy mess and knead it till it's smooth and elastic - about 2 to 10 min.  Shape your dough into a ball like shape, put it upside down in the bowl and get the top good and oily.  flip it right way up, and cover it with your cloth.  Leave it to rise until it's about double in size.  Usually under an hour. 
    • If this was sourdough bread, I would shape the loaves immediately after kneading it to give it a more rustic texture with probable air pockets.  But since we are using commercial yeast, I feel the taste isn't very good with a single rise.  Best to do the double rise thing even if it makes a softer bread.
    • Also, a lot of people recommend a damp cloth - I don't quite understand why they think this is a good idea.  It's such a short rise time, and if you were generous with the oil, then the slight dampness left on the towel from drying the bow is plenty.  The dough isn't going to dry out in an hour.  Besides, as the dampness on the cloth evaporates, it cools the dough.  This isn't what you really want when working with commercial yeast.  Long rise sourdoughs on the other hand... they love a cooler clime.  
      • But you know, it's your bread, do what you like.  I'm not going to come to your house and yell at you if you don't do things the way I say.  
  • When it's risen, punch it down.  Divide into two and shape into loaves.  Whatever shape you like - round with a cross on top, loaf pan, braided, pumpkin shape... whatever floats your boat.  Score the top of the loaf (if you like) to make it rise more evenly.  Cover again with the cloth and leave till double in size (about 20 min).  I do round loaves traditionally, so if you are doing something different you may need to adjust your cooking time.
  • I cooked mine at 425F for 45 min.  Next time I'll cook at 400F for about an hour as I didn't like the crust at the higher temp.  It's ready if it sounds hollow when knocked.  
  • Eat anytime after 10 min, or leave to cool 12 hours before putting in plastic bag.

Affordable?  If you wait till squash season, people will almost pay you to take their excess squash off their hands.  I imagine you could use just about any winter squash - maybe even summer squash, but probably have to either grate it or roast it differently.  You can make loads of pumpkin mush and freeze it in 2 cup servings.  You can use more or less pumpkin according to your tastes.  I think it would be really good with leftover lentils or other pulses.  In fact, forget about roasting squash specifically for this bread, use leftover squash from a family feast.

There's a decent nutritional value to this - but I'm going to hesitate pricing out the ingredients as I understand there is yet another bad harvest year for wheat (what's that? 6 years in a row now?) so expect the price to go up again this winter.  8 years ago a huge bag of flour was regularly on sale for $2.40, now it's never lower than $14.  You know things are bad when locally grown organic wheat berries are now cheaper than commercial flour.  

At the time of writing, this recipe is affordable.. but who knows what tomorrow will bring.

Vegi or fruit, either way squash is probably a healthy thing.  This is a good way to trick yourself into eating your veg - something I have to do often - by making a slightly sweet flavour bread that goes amazingly well with hummus or goat cheese.

How to make this Vegan Friendly: Replace the honey with a pinch of sugar.

I think this qualifies as a Transitional Food, not just because I'm cutting down on my oil dependence by using locally grown wheat, but also because pumpkins and squashes in general are one of the easiest things to grow.  Get the timing right, give them lots of water, and even the brownest of thumbs can look like they know what they are doing.    When we get back to a stage in society where the Victory Garden replaces the lawn, you need to realize that there are going to be a lot of squash.  Better learn how to cook it.

Cucumber, garlic scapes, and dill fermented pickles recipe


Here's a very delicious fermented pickle I've had the privilege to make.  The garlic scapes are from my garden, but the cucumbers and dill are from the store.  I plan to make this again later in the year with my own cucumbers and dill, but use whole garlic instead of the scapes.  It's tasty enough, but the scapes add a special something that is really yummy.



The other day I was lamenting the price of cucumbers in the store.  It was considerably higher than normal for some reason, but fresh fruits and veg are doing this more and more frequently these days.  But I found some cucumbers that had just come in at my friends shop, and bought the lot.  They are those lovely small cucumbers, tiny little seeds, so crunchy and tender.  

A good 20 plus pounds of cucumbers plus a garden full of scapes, and a few other vegs tossed in the pot for good measure, means that I made 6 gallons worth of pickles in an afternoon.  This recipe isn't for that much, but you can easily scale it up or down to your liking.  I'll do it per pound, so per each pound of veg you add...x this and that... very simple.

My recipe is inspired from this... okay, it's basically the same only modified for the open vat ferment style instead of the small jar ferment style.  Very good recipe, but far too small an amount for how good it tastes.  The ratio of dill, garlic and cucs is up to you entirely.  If you want pickled garlic with a hint of cucumbers, do that, if you like cucumbers best, do mostly those.  If dill drives you crazy with love and passion, go nuts.  But basically, I tend for 10 to 50 garlic scapes per pound of cucs, or one bulb of garlic for 2 pounds of cucs - I love garlic.


Cucumber and Garlic Scapes Dill Pickles


  • cucumbers
  • garlic or garlic scapes or both
  • fresh or dry dill.
  • salt
  • optional - chili pepper, other veg like carrots
  • water
  1. Weigh out the veg.  For every pound of veg put aside 2 tsp of salt.  Add one Tbs of salt to the pile (for the pot as they say).  
  2. Cut up the veg how you like.  The more surface area the faster they will ferment.
  3. Layer it in a clean crock (no antibacterial soap, this will kill the bacteria that we need to ferment the pickle), layer of veg, sprinkle herb, layer garlic, layer of salt, layer of veg... and so on.  Save a good Tbs of salt for the top.  When you run out of veg, sprinkle the rest of the salt on top.
  4. Put a plate or cut a piece of plastic or wood or whatever you have on top of the veg/salt layers.  It needs to be smaller than the opening so it can weigh down the pickles, but not too much smaller that the veg can get around the inner lid and float.  Weigh it down with a jar of water or clean rock, or the like.
  5. cover the whole thing with a cotton or linen cloth to keep the bugs out and stop the dust getting in.
  6. Place somewhere at cool room temp, between 10 and 20 C is ideal and ignore it for 12 to 24 hours.
  7. The veggies will make their own liquid, but probably not enough.  Add clear, clean water to the vat until the veggies are submerged.  Cover it back up and ignore it.  
  8. After three days to a week, open up the vat and take out a few cucumbers (with clean hands/tools) to taste.  If you like it, put the pickles in jars in the fridge.  If you would like it more sour, replace the inner lid and weight to make certain everything is submerged.  Cover again with cloth and ignore for another week.
There may be mold.  It happens but is seldom harmful.  If the mold is black or the vat smells rotten - toss it it the compost immediately!  Otherwise, trust your senses to tell you if it's okay to eat or not.  Mold isn't always bad for you.  In fact, a great number of molds are good - antibiotics come from mold, blue cheese, miso soup, sake rice wine... all contain friendly molds.  Most molds don't care about humans one way or the other, some are helpful and some are harmful.  But the point is, not all molds are bad.  If you feel uncomfortable with mold, then don't eat the vat.  If you don't mind it, and it's not black mold, then scrape off the mold, maybe sprinkle some more salt, and make certain everything is submerged below the water.

If you are making this in the heat of the summer, which is likely given the way cucumbers grow, and don't want to eat it right away, then feel free to add more salt.  In the summer, I usually put in 1Tbs salt per pound of veg.  In the winter, when it's cool, I'll add a lot less salt, maybe 1 tsp per pound of veg (this is my basic guide for all vegi ferments like kimchi or sauerkraut).  



You can make these pickles for the flavour, or to preserve the cucumbers or for the health benefits of probiotics.  I find this recipe very affordable, especially when my own cucumbers are in full production... although if you are buying the cucs, then maybe wait for them to be on sale.  

This is a traditional method to preserve cucumbers, and also one very good for transitioning away from dependence on big business and long range food transport.  Make this in the summer when you have cucumbers coming out your ears, then you will be able to enjoy pickles well into the winter, maybe even next spring.  For preservation, it's helpful to keep it in a cooler location.

Harvest and noodles


Lately I've been wondering into the garden and picking random things, then brining them into the house for lunch.  This is what I brought in the  other day.  From left to right, Chickweed, Mangel Wurzel leaves, and a garlic scape.

I'm a bit disappointed in the garlic, usually it goes to see much later in the year, about the same time as the pickling cucumbers are ready.  Last year I made this really delicious fermented pickle from them.  But not this year.  Right now the cucumbers are at an all time high price in the shops, and our home grown cucs are a long way off.


These Mangel Wurzel leaves are actually a kind of animal fodder food.  We are growing them for the first time this year to feed to the sheep and goats over winter.  The leaves we feed in the late summer when the grass is too dry to grow, and the roots we keep for winter feeding.

But to me, the young Mangel Wurzel leaves look and taste like chard, only better.  So I've been munching on them too.



Another one of those one-pot-meals.  Toss everything in, a bit of bacon, some noodles, some carrots, garden veg, then put it on low heat for an hour or five.  Very, very tasty.

Soup and Salad for recovery

I am finally on the mend from this rather nasty flu.  It came on very strong Christmas Morning and since then, I've basically been existing on herb tea and cough syrup.  But now the fever is gone and all that's left is a cough.

The first thing I wanted to eat when the fever broke was soup.  Now I'm normally not a soup person.  Soup does a funny thing to me when I eat it.  About five minutes after eating soup, my body goes all shaky and squiggly line vision things which can last for up to half an hour, then suddenly all my limbs feel like they are made from bricks, my head feels like the skull is falling apart, and my vision goes sepia-black-tunnel.  I always assumed this is to do with blood sugar spiking and plummeting, but it doesn't make sense because I'm not diabetic and it only happens with soup.  But there you have it, another example of how I'm unusual.

And now you know why it was so unusual for me to want soup.  Maybe want is too kind a word here.  My body basically told me it's tomato soup or nothing.  Then I remembered that Jamie Oliver has a tasty looking tomato soup recipe in his book Food Revolution.  It's actually very easy.  I'm not going to write it here, because the only significant changes I did to it was to add dried tomatoes instead of fresh and to put a splash of cream in it.

Since I always feel better less weird when I eat soup with something, especially carbs, I decided it needed croutons.  Never made croutons before, but I saw someone do it on TV once.  Basically, cube some bread, fry it in a generous amount of oil, salt and pepper.  Add garlic, chopped herbs and cheese towards the end.  It's very tasty.

But the soup needed something more...so I asked my body, what else is it craving?  For some reason it said anchovies.  Anchovies?  What kind of body do I have here?  Oh, that's right, a weird one.  sigh, anchovies.  ...  oh, there are anchovies in some salad dressing, like caesar salad... and I already have croutons.

I used the recipe for Caesar dressing from Jamie Oliver's Food Revolution website.  Instead of yoghurt, I used Fil Mjolk cultured in cream for the dressing base.  This is by far the tastiest Caesar dressing I can remember eating.  It's so tangy and fresh compared to the mayo based dressings.  Possibly a bit healthier too.  What I like best about it is that it only takes a few drops of dressing to coat an entire bowl of lettuce.


And that's the first meal I ate since Christmas Eve.  Possibly the best tasting soup and salad I've ever had.  I also didn't get all my usual soup-weirdness, which is nice.

Today with the leftover soup, I think I'll make oven baked wedges from potatoes and yams with just a drizzle of olive oil and some rosemary.


Affordable: About a gallon of soup for under $10.  I really don't know what the going price of soup is these days, but take into account this is one of the best tasting soups I've ever had.  Also, I didn't have fresh tomatoes in the house, so I used the more expensive dried ones in their stead.  So I'm going to go, for what you are getting, yes, it is affordable.

Vegan?  Get rid of the cheese from the soup and croutons and the soup is easily made vegan.  Go with a different salad though, because of the Fil Mjolk, cheese, anchovies... &c.

Healthy: yep.  Not just is it a lovely, large selection of vegies, we also know exactly what went into making our own soup, so no preservatives or anything.

The soup could have been Fast Food, except for the fact that all I have is a blender with plastic walls.  The soup took 5 min to chop everything and only 20 min to cook.  I had to wait a few hours for it to cool down before blending it, but with different tools, it's super-easy to make this in under half an hour.  With all the left overs in the fridge, one can quickly takes some out and heat it up.  In fact, since this soup sits so well with me, I think I'll make some more next week and take it in my bento box.

It may work, don't know, let's find out.

I had some daikon in the back of the fridge that needed eating up, so I decided to make some fermented pickles.  Sliced it thin, mixed it with one chili pepper, also sliced thin, and added one generous teaspoon of sea salt per pound of veg.  Weighed it down and added water to make certain everything was submerged.


It's only been fermenting for three days now, but it is quite tasty.  I'm going to leave it a week or two, tasting it probably again in a week.  I really want the chilies to mellow and the daikon to spice up.  But who knows what will happen... it's all up to the invisible beasties now.

Affordable (they were all leftovers from the back of the fridge that were going to be tossed), healthy, vegan friendly and all that jaz.

Do I need an airlock to make sauerkraut, kimchi, and other fermented foods?

There is a lot of debate out there as to whether or not you need to airlock your vegi-ferments.  People are very passionate and sometimes a bit carried away.  There is supporting evidence for both sides, but as you may have noticed I prefer the open vat method.  In this post I would like to give you a simple overview of the debate and tell you a bit about why I decided that the airlock is optional.



To start with, some definitions:

This topic is mostly about fermented veg, like sauerkraut, kimchi, pickled cucumbers, hot sauce, whatever.  These are processes that use bacteria to transform and preserve foods.  We aren't talking about alcohol ferments like mead and cranberry mead which are primarily yeasted based transformations.

Wild cultures or fermentation is a process that takes advantage of yeast, bacteria, and other invisible beasties that live wild in the air and on the veg.  Cultured cultures and fermentations, sometimes called seed  or starter cultures, utilize a specific starter culture or bacterial addition that you can buy or grow yourself.  So for example, wild sauerkraut is just cabbage chopped up with salt, cultured sauerkraut is (sterilized or not) cabbage, salt and some sort of starter culture like whey or a commercial product made just for this purpose.  These seed cultures are awesome sometimes.  For example, if you left some milk out on the counter, you get sour milk (or worse), but add some Fil Mjolk and you get a tasty yoghurt.  The other advantage of using a starter culture is it provides a more consistent result between batches, whereas wild cultures has more variation.  I'm going to assume we are talking about wild ferments unless otherwise specified.

Open vat fermentations are basically a wide mouth container, some veg, some salt, some water, and possibly a starter culture.  The veg are weighed down with an inner lid and a weight like a rock or bottle of water and covered with a towel to keep out flies and dust.  The inner lid and weight insures that all the veg stay below the level of the brine, and thus out of contact with the air during the fermentation.


The top of the brine, however, is exposed to the air.  Sure there is a slight layer of CO2 gas (fermentation farts) that settle on the undisturbed brine, which protects against some O2 (oxygen) contact, but how well it works is limited.


Airlock ferments have basically the same contents as the open vat, only an extra stage is taken to prevent the surface of the brine from touching oxygen.  This will be something that allows the ferment farts (CO2) to escape without letting any gas back in.  The Pickl-It system is the best example of this, but some people use those snap jars with the rubber rings like this one:

So long as it lets the ferment farts escape, prevents air from entering the container and won't explode from the gas buildup, I'm going to consider it an airlock system in this post.

With the airlock system, the fermenting veggies must be kept submerged beneath the brine just like the open vat system.

In my opinion, the best use for an airlock system does is when the contents of the ferment have been sterilized, neutralizing or killing the wild bacteria, then given a starter culture to it.  This way, it prevents any wild contamination from entering the vat.



Before we really get into this, I want to let you know a bit about my approach.  As a former academic I've read and understood a large amount of the scientific literature on this topic.  I also know and understand the technical jargon, I just choose not to use it when writing this blog.  What's the point in showing off my big words?  That would restrict my audience and intimidate people new to the idea of fermenting.  Big, technical words are awesome when I want to show off how smart I am, that I'm paying attention, or when I need to be very specific.  However, they have a time and place and if a person cannot put the idea into lay terms, then quite frankly they don't understand it.

Have I mentioned I'm also opinionated?

My idea in writing this is not that everyone should convert to my point of view.  It's more in response to one extremely vocal side of the fermenting community.  They quote science and lovely fancy words to browbeat people into their way of thinking - or what happens more often, to browbeat others into giving up entirely on fermenting.  I don't think they realize what they are doing because in their heart of hearts, they feel they are doing good by spreading the gospel of airlocked fermentation.  Perhaps they don't realize that the expectation of everyone achieving perfection on the first attempt is a bit intimidating (I put that way nicer than I feel about it - but hey, I do respect them as knowledgeable and enthusiastic individuals, and I want to give them a fair hearing).

I can find nothing wrong with the science they cite; however, the idea that all fermentation must be in an airtight condition otherwise you don't do any good for your health or possibly damage it, is based on some rather dodgy premises.  If we accept their assumptions (starting premises) then their conclusion is sound (has a logical structure and is relevant to reality).  I have some doubts as to just how much evidence there is in the world to accept these assumptions.  That's what I want to talk about today - not the science it'self, but the philosophy that underlies it.

The other goal of this is to reassure people just starting out with fermenting their own foods that they don't need specialized equipment or knowledge.  All that sciency stuff and toys can come later, for now ignore the neigh sayers and those who bully with good intentions, and just get started.




So basically, both the airlock and open vat systems protect the veg from contact with the air.  Why do we need this?  In a really oversimplified way, there are invisible beasties interacting with the veg to preserve it and make a nice sour flavour.  These invisible beasties are good for your digestion, in fact it's like they are pre-digesting some of the food before you even pop it in your mouth.  I'm going to assume here that you've seen enough yoghurt commercials to know that probiotics are good things to eat.

These invisible beasties, the ones we want, live in an environment that doesn't like oxygen, thus we keep it submerged in brine.  If we left it out in the air, different invisible beasties would start acting on the veg and turn it to unappetizing mush (compost).  By controlling the environment, we influence which invisible beasties (which include yeast, bacteria, fungus and other things) are dominant.



The airlock school of thought has some great science that talks about how many more good bacteria an airlock system can produce and how that the part of the brine that has exposure to O2 reduces the amount of these specific bacteria and grows air-friendly invisible beasties.

I've read the science, I'm not disputing any of it.  It's good science!

However, it does rely on a few assumptions.


  1. exposure to all air bacteria (aerobic) is harmful to us
  2. if some anaerobic (living without air) bacteria (invisible beasties) for us is good, then way more of it is better
    • this also assumes that our body has an unlimited ability to use these bacteria.
  3. That it is only the anaerobic bacteria that is good for us.
  4. It is only the quantity of the bacteria that is good for us, not the ratio.


The first assumption is crucial to the point of view that we should always use an airlock.  It's also the most pathetic assumption.

Think about it, we are exposed to aerobic bacteria (air loving invisible beasties) constantly.  We breath it, we touch it, we eat it on our food... Some of them harm us, but not all of them.  Some of them help us, but not all of them.  We don't understand everything about the invisible world, but we do understand that without air loving invisible beasties, we wouldn't exist.  Therefore, it's difficult to accept the first premise.  Not all aerobic bacteria (air loving invisible beasties) are bad for us.

So is the way that the air loving invisible beasties interact with the ferment bad for us?  Well, it reduces the non-air loving invisible beasties and over time will slow and changes the ferment... But is that entirely bad?  Most people these days ferment for taste and don't leave the vat of sauerkraut at room temperature for a year before chowing down.  They make smaller batches, fermented for shorter periods of time and consumed within a few weeks or months.    So the good/badness of the air-ferment interaction does not factor into it nearly so much as it would for longer fermentations.

But also, how do we know that this air-ferment interaction is bad for us as eaters?  Just because it reduces the quantity of the non-air loving bacteria, does it follow with absolute certainty that it is bad for us (in moderation like you find in an open vat system)?  More on this follows.

The second assumption, if some is good for us, then more is better is a common belief in this day and age, however, it's usually faulty.  Actually, scratch that, it's always faulty.

An example: water is good for you.  In fact, like bacteria, it is necessary for your survival.  Too much water is deadly.  You are probably aware that you can drown in too much water, but did you know that if you drink too much, it will kill you?

Another example:  Oxygen.  We like this.  It makes us stay alive and breath and stuff.  But too much oxygen, and you get sick and/or die.

That's some anecdotal evidence showing that if a little of something is good, then more of it isn't always better.  Bringing it back to the fermenting topic - yes, everyone agrees that some non-air-loving invisible beasties (anaerobic bacteria) is good for you.  It's a probiotic that improves gut health and digestion.

However, if some is good for you, what evidence that more is better?  Where is the line drawn?

One of the problems with this is that bacteria often competes with each other for food and space, often changing the environment to suit it's needs and exclude competition.  We know that the body needs a balanced bacterial community to function properly, but consuming a lot of one bacteria (or one conglomeration of bacteria), we risk tipping the balance in our gut.  But eating some is good, too much is bad... hmmm.

That brings us to the sub-premise (the little bullet point beneath the second assumption), that our body has the capacity to use all the bacteria.

We know that it can use some bacteria, and that too much of a limited kind of bacteria is harmful.  But the real question is that if we can use all the extra anaerobic bacteria (non-air-loving) produced in the airlock ferment.

The airlock produced a lot more of this friendly bacteria than the open vat system (no one is disputing that), but can we use it?  Even if it isn't harmful, is it helpful to have that much more?  Is it like Vitamin C, the body uses so much and flushes the rest out, therefore it's useless to take extra - is it like that?  Is going to the extra effort of culturing more anaerobic bacteria worth it, or does the law of diminishing returns apply?

The third assumption, that only anaerobic (not-air-loving) bacteria is good for us to consume.  This is only subily different from the first assumption, so I'm not going into detail in the interst of brevity (3 thousand words is enough for one blog entry don't you think?). - this is pretty much addressed when I talked about the first assumption.  But to recap, it's obvious that this is not true.

The fourth assumption, that it is the quantity of specific bacterial species which is important and not the ratios.  This is so very 20th Century, and I don't blame people for thinking this.  I disagree with it, but sciencey people come by it honestly, they were trained to focus on one factor, item, or collection of similar items, because it's easy to isolate for all the variables.

However, these days, people are starting to realize that isolating one variable does not lead to the ability to predict how the entire system works.  For those who studied philosophy at university, the fallacy label goes like, 'assuming that the whole is the sum of it's parts'.

Even if we were able to isolate and study each individual bacterial species on it's own, especially the ones that interact with our digestion, we still wouldn't be able to understand the entirety of how our gut works.

When it comes to the health of the human body, more and more people are beginning to realize that it's not the individual components, but rather the ratios between them.

We can take this to refer to the ratio of anaerobic (not-air-loving) bacteria in our gut talked about earlier, but we can also look at the ratio of anaerobic and aerobic bacteria (air and non-air loving invisible beasties) in the ferment itself.

Wait!  Am I suggesting that the air contamination that happens with the open vat system may actually be a good thing?  Sort-of.  It's more something I've been wondering about and have failed to find any studies into it that both look at the interaction of the air and non-air loving bacteria in the vat AND how this ratio interacts with the human gut.

But why would I even consider this a possibility?  Let me tell you.

I am slightly obsessed with the history of food and food preservation pre-refrigeration.  Lacto-fermentation - the fancy name for what happens when you make sauerkraut and what we've been talking about this entire post - ... Lacto-fermentation has been used by people for a few thousand (probably a few ten-thousand) years, and during this time, it was almost always in an open vat kind of system.  The 'airlocks' available until the 19th Century, were slightly porous, which allowed the food to breath.  For example a bladder (pre-20th Century clear-wrap) is very slightly porous and over time, 'breaths'.

So I look at history and I see that for most of human history people have been using open vat fermentation with out any obvious ill effects.  Especially none of the ill effects that some of the more enthusiastic pro-airlock followers declare will happen.

Looking at what we are learning about ecosystems (because what is a gut full of invisible beasties if not an ecosystem? - rhetorical question), human health, and history, it makes me wonder if looking only at the quantities is missing out on the really important aspect of fermenting (and how it relates to our health).  Maybe there could be something to the ratios of invisible beasties - and possibly, just possibly, maybe using an airlock is detrimental to our health.  This needs more study.



One day, these assumptions will be taken into account, and I could well be proven wrong about them all.  But until that time, there isn't enough foundation to believe that an airlock is completely necessary.  The arguments of the pro-airlock school is logical (it makes sense to the rational mind) but it has yet to be proven that it is sound (the assumptions at the beginning of the argument have yet to be found without question to be relevant to reality).


My opinions on the topic of using an airlock or not when fermenting:

First of all, please stop pounding beginners over the head about being perfect.  Even if the airlock is the best way to go, it's not the only way that works.  Give them a chance to try making some kimchi with the materials they  have on hand and get excited about fermenting.  Once they are excited, then you can bombard them with your opinion on how to do it right.  But please, not before.

I use an airlock when it suits me, and I don't when it does not.  More importantly I don't care what you use when you ferment.  It's YOUR choice, not mine.  Do what you want.  In complete and brutal honesty - I DO NOT CARE what you use.

What bothers me is this new kind of cyber bullying that comes from people trying to help by expressing their opinion that the only way to do something is the right way and that if you can't do it that way from the start, don't even bother.  Yes, people go to forums looking for answers to their questions, but the reason they are really there is to seek support and fuel their enthusiasm for their new hobby.  The line between being helpful and being a bully seems to be getting thinner as time goes on.  But I can give you an example of what the difference looks like (roughly paraphrased from things I've seen in different places on the internet)

N00B: Oh wow, I'm so excited to start my first kimchi.  The only thing I have on hand is this plastic tub, a cabbage and some salt.  What sort of thing should I use for an inner lid?

Helpful:  Good for you starting your first kimchi, let us know how it goes and feel free to ask if you run into any trouble.  I usually use a plate for the inner lid, but some people use plastic or wood or any non-reactive thing that fits.  Maybe later on, you might want to move away from plastic as some people believe it can leach into your food.

Bully: Don't use plastic ever!  That's so nasty.  Just toss it out.  (technical stuff about molecules leaching... acid reaction...&c.).  What you really need is this expensive fermentation vessel and starter culture, because you just can't rely on wild bacteria.

Did anyone notice how the Bully answer usually doesn't answer the original question?  Anyway, enough of my complaining.  You get the general idea of what motivated me to write such a long post.


I wonder if all this talk about airlocks and stuff isn't some residual meme leftover from the public education system.  All that fear of botulism and other possible harms that come from an industrial food system but are not present in a fermented setting, these fears linger and are difficult to shake.  Maybe this is what drives people to take total control of the fermentation - with airlocks and starter cultures and total sterilization at every step in between.

For those of you on the receiving end of those well meaning lectures as to why you must only ever always use an airlock when fermenting.  Be strong.  These people have a lot of science and aren't afraid to use it.  They are also very intelligent and vocal.  It's hard to stand against that, especially when all you have is an unarticulated feeling in your gut that maybe something they say isn't right, but you can't find any fault in their logic or science.  That's mostly because there isn't any fault in their logic or science.  It's their basic assumptions that have yet to be proven... and if you want to argue that, it's near enough futile.

Arguing basic assumptions with a passionate, intelligent person results in cross monologues.  Which is to say, you both yell at each other and cannot hear what the other is saying, so really you're just yelling at yourself, and that's not something a sane person should be doing in public (on the street or in an internet forum - both are public, the latter more than the first).

Fermented Hot Sauce Recipe from Dried Chilis and Excessive Amounts of Garlic

I adore those long, thin red spicy peppers that go so well in stir fry.  The garden centre calls them Super Hots, the grocery store Thai chilis, the grocery store in the garden center calls them chilis, and nothing else.  I call them yummy.


Every year I grow a few and buy a few, and it's always a few extra.  So they get threaded and hung to dry.  Dried chilis are great...except after a year or two of storage, they tend to loose their colour and pazaz.  So I decided to try a little experiment.

Fermented Hot Sauce with Garlic

For each 1/2 cup of dried chilis
1 clove head of garlic and
1 Tbs of salt
water


  • Roughly chop up the chilis, or not.
  • Peel the garlic and roughly chop it up or not
  • Combine salt, garlic and chilli in a small jar.  Add water to cover.
  • Use something to press down on the chilli mix so that every part of it is submerged.  I cut out a circle out of plastic container and then filled a small mason jar with water to use as a weight.
  • Leave on the counter for at least a week... I um, forgot about it and it was there for over a month.  If anything, I think the longer ferment was good for it.  Check it every couple of days (or not if you forget) to make certain everything is submerged and to scrape off any mould that forms.  If the mould is black, toss the whole thing, otherwise, it should be fine.  The spices, garlic and salt are strong enough to kill just about anything bad, but if it develops an off smell, don't eat it.
  • When it's time, place the chilis, garlic and brine in the blender or blitzer.  Blend or blitz till it's a lovely puree.  You may want to add a pinch of sugar or a few drops or honey.  A few drops of apple cider (or other natural) vinegar also go good in this.
  • Store in the fridge, eat within... I have no idea how long, but it will probably last a year.  You can store it at room temperature, but it may go mouldy after a month or so.

Very hot sauce with strong garlic taste.  yum.

Affordable:  Yep, the chillies were getting too old and destined for the compost, garlic was from the garden.  The only thing I paid for was the salt.  But to buy these ingredients in the store are usually cheaper than buying a good quality hot sauce.

Vegan-Friendly: Yes....unless you add honey at the blending stage.

Healthy and allergies:  By making your own hot sauce, you can avoid any additives or ingredients that you may be allergic to.  Also the probiotics from eating a live food, are good for you too.

I could do the same old song and dance about this being a good Transitional food, but you know it all by now.  Encourages self-reliance, and stuff, so forth.

Pasta day: Ricotta and Chard stuffed tubes


I found these pasta tubes in a store and I thought to myself, "hmm... I've never tried that before, but I bet it will go well with chard."  Without a solid plan, I brought them home and set to work making myself a treat.

A few minutes playing with google, and I didn't find any recipe that appealed to me, so I gave up and just went with my gut instinct.  That was the best decision I made all week.  The pasta turned out So Friggin Fantastic!


The filling:  Ricotta, which ended up being home made, with chard from my garden that has been boiled and finely chopped.  Salt, pepper and a pinch of cayenne.



The sauce: onion, garlic, a carrot (first of the winter carrots from the garden).  Tomato sauce, wine, spicy rooster sauce, basil, salt and pepper.

Crispy fried bacon chunks for the top.  And some more whine in the dish to help the pasta cook through.



Sorry guys, it smelt so good and I was so hungry I couldn't wait to take a good photo.

Next time I think I'll put a thin layer of sauce under the pasta tubes to help them cook evenly all around.

There are some tubes left and I have a craving to somehow combine them with squash.  hmmm... have no idea how to pull that off.

Radish Leaf Rice Spice (Furikake) Recipe (no soy)

In Japan, they have this amazing thing.  It's a mixture of random things, dried and put in packets or jars, that you sprinkle on top of rice.  It's called Furikake and it is exceptionally delicious.  It transforms a regular bowl of rice into something extra-ordinary.


You will find these highly addictive rice spices in just about every grocery and convenience store in Japan, and it comes in a huge assortment of flavours from seaweed, to shrimp, to desiccated egg, to my personal favourite, salted salmon.

I don't know how old the idea of Furikake is, but in the book Black Rain, a book describing the events of a family surviving Hiroshima at the end of the Second World War, the woman cooked up something very like this using an assortment of ingredients.  If I remember correctly, radish leaves were one of them.

Most people in the West don't consider radish leaves a food, many go so far as to say they are toxic, which I suspect they may be if you eat too much of it - but that's true of just about anything, including water.  In small quantities these greens are delicious and nutritious.  But using otherwise discarded veggies like radish and carrot tops as a garnish is an affordable way to add flavour to a dish.

The problem is that most commercial made Furikake is full of ingredients like soy and MSG, and other things that aren't necessary good for a person.  Thankfully it's quite easy to make at home, and by doing so you can change the ingredients to accommodate different allergies or other dietary needs (like low salt or veganism).

My recipe changes each time I make it, depending on what is in the cupboard and how I'm feeling.  I seldom make a vegan version, but if you like, there is a great vegan radish leaf rice spice recipe here.  It comes from my favourite blog, Just Bento, and my rice spice is heavily inspired by her Furikake no. 1 recipe.

Radish Leaf Rice Spice (Furikake) Recipe

A large bunch of radish leaves (about 2 cups after blanching)
1/2 cup sesame seeds
1/2 cup bonito flakes
1/4 cup dried mini sardines or shrimp
1 super-hot chili (fresh or dry) or 1/2 tsp of dry chili flakes
2 Tbs Fish sauce (or to taste)


  • Chop the chili as fine as possible and put to one side.  If you like, you can finely chop the sardines/shrimp at this time. If you cannot get very-tiny sardines, you can get the dried larger version, and chop them fine.
  • Wash the radish leaves really well.  Bring a large pot of water to the boil and blanch the leaves for about 3 minutes.  Strain leaves, rinse under cold water, and squeeze the leaves to remove as much moisture as possible.  Chop leaves fine.
  • In a large skillet or wok, dry fry the leaves on medium heat until most of the moisture is removed.  Stirring almost constantly.
  • Add the sesame seeds, bonito flakes, dry sardines/shrimp, and chili, mix well.
  • Mix in the fish sauce and continue to fry and stir until things start to dry out.  
  • At this stage you can cool completely and wrap into individual size bundles to freeze... or you can do what I did and dry them in the dehydrator or oven.

to dry on a dehydrator, I covered half of each try with tinfoil
Each try was 1/3 turn from the last,  to encourage airflow
If you are going to dry them and keep them at room temp, then make certain they are completely dry, cool completely and add one of those 'do not eat' packets you sometimes get in food - silicon or some such in them, that absorbs moisture - I found mine in packets of seaweed.  Keeps in the freezer for about 6 months, or at room temp for about 2 months.

I usually make this recipe if I have a crop of radishes that didn't bulb up for one reason or another.  Maybe the weather was too wet, maybe worms got in at them, whatever.  I harvest them just as the first plants are starting to bolt.

Chard Wraps Recipe

Over the last 6 weeks or so, I've had some of the oddest food cravings.  It's not the kind of craving like the intense desire for eating that last piece of cake, or chocolate brownies.  It's more extreme than that.

No, I do not have a bun in the oven.

Often hard to pin down exactly what the food is my body wants, the craving can last for months or years until I eat what it demands.  Whereas a regular sweet tooth craving will go away in a few hours/days.  Usually these extreme cravings are for foods I don't even like.  For example, last spring it was for oysters.

Right now, my body is demanding several things:  Almonds top the list, followed closely by anchovies.  Also high on the list are milk products (but surprisingly not cheese), swiss chard, oats, fish sauce and chickpeas.  I'm sure there must be some diagnostic element to all these strange cravings.  Most of these foods are high in calcium and the kind of oils that I don't normally get in my diet.  None of them are particularly unhealthy, so I've added them into my diet, in moderation.

As much as I want to eat chard, I only know a few recipes and they are getting a bit repetitive.  So I asked my friend for ideas.  Here's what his family makes with chard.


Chard Wraps


1 cup rice, soaked but not cooked
chard leaves (quantity depends on size of leaves)
onion, tomato, herbs, meat... whatever you think goes well with this.  I used shallots, dried tomatoes and thyme.
potato
3 cups of broth of your choosing, I like chicken broth.


  • Wash and soak the rice for at least an hour (upto 24 hours).  Rinse and drain.
  • chop up the onion, tomato, whatever you want in the filler, very fine.  Combine with the rice, put to one side.
  • If you haven't already, trim off the stocks from the chard, reserve the stocks for soup or something else.  If the leaves are very large, chop them into two or four pieces.  Blanch for about 1 minute by boiling some water in a very large pot, submerge the leaves, remove from water and drain.
  • slice a potato and put it in the bottom of a large pan.
  • Wrap about 1 Tbs of rice mix in each leaf.



  • Place each wrapped chard leaf in the pan on top of the potatoes.  Make certain they are tightly packed together or it will all fall apart.

  • Place a plate on top of the wraps to hold them down and add broth.
  • Bring to boil and cook for about 20 to 30 minutes (depending on kind of rice, brown rice usually takes longer).  Serve hot or cold.



This is an affordable dish and healthy dish.  You can add different fillers to the rice to accommodate allergies.  If you use vegetable broth and no meat in the filling, this is Vegan Friendly. 

I deliberately left the instructions vague as to how much of what you put in the filling.  I think the joy of this meal is that you use what is on hand, and adapt it to different dietary needs.

Harvest and making random things

Time time of year my focus is more on outside the house than inside the kitchen.  The garden needs constant attention, the animals and...well everything.  But I still get a bit of time to cook what we harvest.

Calendula and sage for the dehydrator.  The sage is for tea and cooking, whereas I hope to have enough flowers by fall to make a dye bath for some fabric.  


Also in the photo are garlic scapes.  I never brought these into the kitchen before, so I really had no idea what to do with them.


I decided to try (a slightly altered) version of these cucumber pickles.  The ingredients are almost the same, but I used a different method for fermenting them.  Although it's going to be difficult improving on this already fantastic recipe, I plan to spend much of the summer attempting variations.


With a proper cellar I could see this being a great way to preserve cucumbers and other veg.  It was magical as the taste of the cumber went from salty to sour in just a few days.


I've also been harvesting several wild plants (aka weeds, of which we have many this year) for eating and medicinal use.  This is chickweed:


I used it to make a hand salve for a friend with some rather impressive skin troubles.  Chickweed has worked in the past for him, so I'm curious if my standard salve preparation would do the trick as well.

And finally, what would summer be without a pot of Kimchi on the go?

Daikon, carrots and su choi make up the bulk of this batch.  I chopped up some garlic scapes extra fine and tossed them in as well.  Very tasty.  Used the recipe from the book, Wild Fermentation - well more or less.

Vegetarian Vindaloo while camping


Having been camping twice now this summer, I have discovered that after being outside all day, even on a hot day, it is really nice to have a warm and wholesome dinner.



For the group I made vegetarian vindaloo with sourdough bread (both nettle and regular sourdough), home made wine sauerkraut and cucumber salad.  

The vindaloo included onions, carrots, tomatoes, potatoes, and chickpeas.  The cucumber salad - my personal favourite - was cucumbers, shallots, salt and white balsamic vinegar.  The most difficult aspect of this was to make something that everyone could eat - we had quite a collection of allergies in our group.

It worked out to be $3 per adult - which was a bit steep I admit.  However, I used organic veg, not all of which were in season, and when you factor the salads and the spice mix into the price, it adds up quickly.  

This time I made the curry (with help from The Captain) the day before heading camping, packed it in a big giant bucket, and then heated it up on site.  Next time, if I make it in advance like this, I will store it in two or three smaller buckets, and only heat up one at a time instead of the whole thing at once.  That way if people don't want it all, then it's easier to keep it for lunch the next day.

Three Nutrious Recipes for a Clear Liquid diet

I spent the last week on what the doctor calls a clear liquid diet.  It's not much fun.  There are all sorts of reasons why a doctor might recommend this, but in my case it comes from a reoccurring problem with my gut.  When I eat a food that I'm sensitive to then my digestion shuts down and there is much pain.  It's my primary motivation for cooking everything from scratch and why I started this blog.  Surely I'm not the only one out there with these interests.

By making my meals from ingredients instead of ready-made food-like items, then I know everything that goes into what I eat.  But every now and again, I grow slack, eat something where I don't know who made it, and this is what happens.

For the clear liquid diet, the doctor recommended for me to have mostly fruit juice and broth.  No tomato, no dairy, low to no fat, and for me no soy.

The biggest problem I had with this diet was that there is nothing to grab hold of the 'food' in the stomach and slow release it.  Bread, pasta, and other carbs hold on to the food and slow the digestion, which makes one less likely to spike your bloodsugars.  Protein also helps regulate how the body absorbs energy from the food.  On top of all this, the fruit juice is very high in sugars, so my first day on this diet was a real roller-coaster.  Even without diabetes  I could feel my bloodsugars soar and plummet in the space of a few minutes.  It was exhausting and, well if you know a person with diabetes  you know how dangerous it can be.

Day two, I focused on broths and strained soups, with a bit of watered down fruit juice.  This went much better.  I didn't want to just use packet and cube broth because there tend to be a lot of salt (and finding a soy-free broth is not easy).

As I didn't know how long this diet would go on (a couple of days or a couple of months) I wanted pack as much nutrition as I could into liquid form without, and since puréeing food is not an option (I checked with my doctor)  I read a bit then set to work making broths.

Here are a few recipes that I enjoyed the most.

Soy Free Miso Soup

This can be made vegan friendly by making the dashi stock from just kombu (seaweed) and leaving out the bacon.

Speaking of bacon, check with your doctor specifically about bacon, even as a flavouring for your soup broth.  In some cases this is a huge no-no.  Given that I'm using my own home made bacon and I know exactly what went into curing it, I felt okay to put a small amount in my soup.

About 4 inches of Kombu
Generous handful of dried fish like tiny anchovies, or shrimp
Small handful bonitio flakes
Water
South River makes a soy free miso
that is rather chunky

Note how we are using so much more in this than usual, that's because we are just eating the broth and trying to get as much flavour into it as possible.


  • Put the Kombu in the water and soak for at least 10 min.  
  • Add the fish and bring to a slight boil.  Add the fish flakes.
  • Simmer for about 10 min.  You don't need to strain because we will be straining it as we pour it into the mug.

For the miso soup

Soy free Miso paste (or you can use any good regular miso paste if you can handle soy).  I'm using South River Chick Pea Miso paste, which is chunky  which is fine most of the time, but for this, it needs to be mashed into a paste before using
About 1" of 1 rasher of bacon chopped
one green onion.

  • Add the miso paste and bacon to the Dashi and simmer for about 10 min.
  • Just before serving, turn off the heat and add the green onions.
  • Strain into a mug.

Roasted Chicken Broth in a slow cooker

If you are a fan of roasting whole chicken, then you probably have a few carcases in your freezer.  But if not, then you can either leave the house while the rest of the family enjoys a roast chicken or you can buy some chicken bones from your local butcher.  It won't have the same flavour with raw chicken bones as with roasted, but it will still be very yummy.  

Just know that either way, if you choose fresh or roasted, the better quality the bird, the better the broth.  

1 chicken carcase from a roast chicken, or the equivalent amount of bones (fresh or frozen is fine)
One onion
2 carrots
Two gloshes (larger than a glug) of a natural vinegar like apple cider
Bay leaf
3 pepper corns
1 large Tbs salt
(if you like some other veg like celery, fennel, whatever.)

  • Wash and roughly chop the veg.  No need to peal anything, although personally I peal the onion.
  • Put the carcase and everything else in the slow cooker.  Cover with water.  Put on high for at least 2 hours, then turn to low.  About 8 hours later (I do this overnight) it should be done.  
  • Strain and put broth in fridge, and when it's completely cool skim off the fat from the top.
  • Heat up to serve.  If it's too mild tasting, you can lightly fry some garlic in the bottom of the pan before adding broth, bring to boil, add salt to taste.  Strain into a mug.

Why Vinegar?  It helps extract nourishment from the bones and reduces any gamy taste that the meat may impart into your broth.

Why skim the fat?  Well, normally I'm a huge advocate of having more brain healthy fats in the diet, but in this instance, one wants to avoid anything that makes the digestive system work hard, which includes fat.


Bone Broth

Herbs and spices
This recipe is more a guideline than an actual recipe.  There are many ways of making bone broth.  I like a stronger vegetable flavour to the broth and use the bones more as added nutrition than flavour.  

Lamb bones are best if you are having trouble with inflammation   It's one of the only  meats they recommend for a low-inflammation diet.  But they aren't always easy to get, so my second choice would be ox tail for flavour.  Any marrow bone would do however.

Get out your cast iron pot if you have one.  Not only does it have great heat distribution  it adds trace amounts of iron to your food.


Some veg ready to go in
Some bones, lamb, goat, beef, or even oxtail if you can get it

1 large, sweet onion
2 carrots
2 stick cellery
1/2 inch ginger
some fennel fronds
several cloves of garlic
a handful of fresh thyme (or herb of your choice)
2 bay leaves, 4 pepper corns, a pinch of chily flakes, 1 Tbs sea salt
Generous glug of natural vinegar like apple cider or wine


  • place a generous glug of olive oil in the bottom of the pan, preheat on medium while you chop the onions.  Fry the onions slowly at medium to medium low heat while you chop up the rest of the veg.
  • Wash the rest of the veg and herbs (no need to peal the carrots so long as it's well washed) and divide into two sections.  Hard veg like carrots, celery sticks, and the stocks of the fennel fronds go roughly chopped in one pile, and soft veg like thyme, fennel leaves, and spices go in another.  
  • When you've got the rest of the veg ready, crank up the heat on the onions and stir constantly until it just barely starts to brown.  
Fry the onions

  • Toss in the hard veg (carrots, celery, &c) and fry while stirring for about 3 to 6 min until they start to sweat (this helps release more flavour to the broth).
  • Turn down the heat and add the bones, vinegar, and some cool (not too cold or you may damage the pan - but you want cool water as it helps bring more flavour from bones and veg.) water so that it comes almost to the top (leave room for bubbling and for adding more stuff.)
  • Bring to a boil, then add the rest of the ingredients  and simmer for several hours.  At least 4 hours. Skim off any froth you see forming on top.

  • Taste and add more salt as needed.
  • Turn off the heat and let cool for a short time, then strain and place the broth in the fridge.  
  • When completely cold, the fat will be hard and floating on the surface, skim this off.
  • Reheat to serve.



 Don't skimp on the herbs, they are full of amazing super-food-goodness-stuff.  Add a whole 'nother layer of nourishment to your meal.



Here's a tip to add more nutrition and keep your bowels happy during this difficult time; HOWEVER, it's very important to ask your doctor specifically about this before you try this as it can be counterindicated in some situations.

If you make your own kimchi or sauerkraut (not the stuff that's been heat treated or from a can) then you can add one tsp of kimchi or sauerkraut juice to each mug of broth (but not to the boiling liquid as it will kill off the good bacteria).  This adds flavour and probiotic bacteria that will help repopulate your gut with healthy (I'm pretty sure the word I'm looking for here is flora, or is fauna?).




Over all, the key with this clear liquid diet is have a little bit constantly and not try to have set meals.  There aren't that many calories in broth, so unless you go completely overboard (which is doubtful when you feel this miserable) you are not going to have a problem.

One nice thing about this clear liquid diet is that it's affordable, healthy (when guided by your health care professional) and not too challenging to make yummy sustenance.  Chop, Fry, Boil, Strain (easier than pasta).




On a personal note, one of the best things that has come out of all this mess is that I had my blood tested for all sorts of vitamin insufficiencies.  Not only did all the results come back fine, they came back IDEAL!  According to the doc, I have perfect amounts of nutrition in my blood, they can tell how well my body is using things like iron, and the ratios between Cal., Mag. and Zinc.  It's better than most healthy people.  And for a person with a dodgy digestion and who shuns supplements (except in extreme cases) I'm doing so well, they want to retest me to make certain it wasn't a lab error.  (but I know it wasn't).  Well, actually, I'm surprised the iron and B vits are so well balanced given that I eat very little meat (maybe an oz or two a day, not including poultry and fish - even if I'm always blogging about it), and only eat beef every few months.  I must be doing something right.

By stocking my kitchen full of ingredients (instead of ready-made foods) and pairing my foods together in a way to maximize nutritional absorption (fermented cabbage like Kimchi or Sauerkraut with pork, Olive oil with Tomatoes) and by eating a lot of live culture foods, I've managed to create a balanced diet.

Now, if only I could learn not to eat stuff made by strangers.
